Pancakes

Our family loves these pancakes. I can barely get them off the griddle before the kids are asking for more. I like to use our Nutrimill Grain Mill to grind the flour, but you can for sure use standard flour.

This quick breakfast is sure to please a crowd. It also freezes well for later!

Ingredients

Pancake Bater
  • 1 1/4 cup freshly milled flour (or store bought)
  • 1 tablespoon baking powder
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons oil (whatever you have on hand)
  • 1 1/2 cup milk (or non-dairy alternative)

Instructions

When mixing with a blender
  1. Preheat griddle or cast iron pan on medium high heat.
  2. Coat griddle (or pan) with oil or butter.
  3. Put liquid ingredients in the bottom of the blender pitcher.
  4. Add dry ingredients on top of liquid.
  5. Blend on medium/medium high speed until all ingredients are incorporated.
  6. Put 1/4 cup of batter on griddle or pan.
  7. Flip when the bubbles are just popped.
  8. Remove from griddle (or pan) when both sides are evenly brown.
  9. Serve with the toppings of your choice.
When hand mixing
  1. In a large bowl, mix all dry ingredients together.
  2. Make a well in the middle of the dry ingredients.
  3. Add wet ingredients.
  4. Mix with a whisk until combined.
  5. Put 1/4 cup of batter on griddle or pan.
  6. Flip when the bubbles are just popped.
  7. Remove from griddle (or pan) when both sides are evenly brown.
  8. Serve with the toppings of your choice.
